Tagliolini Gran Torino
Tagliolini, or rather “Tajarin” in Piedmont dialect, are a fresh egg pasta and their shape resembles a very thin and narrow tagliatella (less than 1 mm thick). About as long as spaghetti, they are deep yellow with a strong flavour given by the many eggs used to make them. Perfect with a wide variety of sauces, from the more elaborate ones (such as with fish) to the simpler ones, and even in soup. Try also the squid ink and Senatore Cappelli flour versions.
