Maremma style quadratone with scent of Castelmagno cheese

100 gr
cooked salami
100 gr
Castelmagno cheese
100 gr
fava beans
to taste
milk
to taste
cured ham to garnish

Fava beans cream with scent of Castelmagno cheese

Procedure

Blanch the beans for about 3 minutes in slightly salted water, drain them and leave them to cool in cold water for a few minutes, then peel the outer skins. Blend the beans with the basil leaves, a few drops of oil, a pinch of salt and pepper. Warm up the goat cheese in a bain-marie together with the milk and the Parmesan cheese, mixing until you get a smooth, thick cream. In a different pan, brown the salami cubes and then dry them with absorbent paper. Sere the P&C Fresh Pasta on a bed of creamed fava beans, adding the cheese sauce, the salami, the cured ham cut into thin strips, an garnish with a basil leaf.
