Ossobuco stuffed fazzoletto with springtime meat-based sauce, with saffron and coffee

Ingredients to serve 6 persons

200 gr
cream
150 gr
zucchini
1
shallot
1 dose
saffron
30 gr
butter
to taste
hazelnut cramble
to taste
coffee powder
to taste
salt and pepper

Condiment

Springtime meat-based sauce, with saffron and coffee

Procedure

Chop the shallot. In a separate dish combine cream and the saffron. Melt the butter in a pan to brown the shallot and the zucchini cut into small cubes. Once the vegetables are cooked and crisp, add a handful of hazelnuts crumble.  When the P&C Fresh Pasta is cooked, mixed it into the condiment to absorb the flavor. Plate with the cream and saffron blend and garnish with coffee powder.

Tips from the chef

In lieu of coffee, you can garnish the P&C Fresh Pasta with nutmeg.
