Senatore Cappelli noodles with speck and chicory

Speck and chicory
Remove the outer leaves and cut the chicory into thin strips. Cut the speck into strips, chop up the shallot and saute everything in a pan. Add a few tablespoons of broth and the chicory, and season with salt and pepper to taste. When the chicory has softened and all the broth has dried up, add the speck and pour in the white wine and simmer until evaporated. Cook the P&C Fresh Pasta and saute in the condiment. Plate with Parmigiano Reggiano.
