Trofie with almond, ricotta and rocket pesto

Ingredients to serve 6 people

100 gr
almonds
1 bunch
parsley
50 gr
Grana Padano
100 gr
ricotta
1 handful
rocket salad
to taste
Extra virgin olive oil
to taste
white pepper
to taste
water

Condiment

Almonds, ricotta and rocket pesto

Procedure

Put the peeled almonds, ricotta and Grana Padano in a bowl with a few drops of oil and half a glass of water. Blend to obtain a cream. Warm it up in a pan with a sprinkling of white pepper. Cook the P&C Fresh Pasta and saute in the sauce. Plate with the almonds and rocket salad.

Tips from the chef

You can use hazelnuts instead of almonds to make the pesto.
